Chilled Beet Soup
Ingredients
1 cup peeled
and sliced cooked beets
1/4 cup chopped mild onion
1 medium potato, cooked, peeled, and cubed
1 cup plain yogurt
2 tablespoons lemon juice
1 cup chicken or beef broth
1 cup cracked ice
1 tablespoon finely chopped fresh dill
1/2 cup peeled, seeded, and finely diced cucumber (optional)
Salt and black pepper to taste
Serves 4
Directions
1.
Combine the beets, onion, potato, lemon juice, salt and pepper, chicken broth,
and yogurt. Blend on high speed until smooth.
2.
Add the cracked ice and blend 1 minute. Add the cucumber (optional).
3.
Taste and adjust the seasoning, if necessary.
4.
Serve chilled, garnished with the chopped dill.
