Great as an
accompaniment to spicy barbecue. It is also a healthy recipe with no fat.
Ingredients
4 large
cucumbers
1 small red onion, thinly sliced
1/3 cup chopped fresh mint
1/3 cup chopped fresh cilantro
2 to 4 whole dried red chili peppers
2 cups cold water
2 cups rice vinegar
1 cup granulated sugar
1 teaspoon salt

Directions

Peel the skin off the cucumbers. Cut off ends of each cucumber, cutting to
beginning of seeds. Halve cucumbers lengthwise. Scrape off the seeds. Cut each
cucumber half into 1/4-inch-thick, half-moon-shaped slices.

Combine cucumbers, onion, mint, cilantro and chili peppers in a glass bowl.

Put water, vinegar, sugar and salt in a mixing bowl. Stir until sugar dissolves.
Pour this over cucumber mixture. Stir lightly.

Cover. Refrigerate until ready to serve. Serve well chilled.
