cucumbers Makes 6 to 8 servings Directions 1. Peel the skin off the cucumbers. Cut off ends of each cucumber, cutting to beginning of seeds. Halve cucumbers lengthwise. Scrape off the seeds. Cut each cucumber half into 1/4-inch-thick, half-moon-shaped slices. 2. Combine cucumbers, onion, mint, cilantro and chili peppers in a glass bowl. 3. Put water, vinegar, sugar and salt in a mixing bowl. Stir until sugar dissolves. Pour this over cucumber mixture. Stir lightly. 4. Cover. Refrigerate until ready to serve. Serve well chilled.
