Lemon Beet Rice
This rice preparation is extremely easy to make. It is also very
healthy. It may be used as a main dish or as a side dish.
Ingredients:
1. 1 cup uncooked rice
2. Fresh squeezed juice from 1 medium sized lemon
3. 1 cup cooked beet root, cut into small cubes
1 yellow sweet bell pepper cut into small pieces
4. 1 cup onion cut into small pieces
2 dessert spoons of fresh grated ginger
1 dessert spoon crushed garlic
Cooking Instructions:
Cook the rice according to
package instructions. When it is half cooked, add the lemon juice to the rice
and salt to taste. When the rice is cooked, set aside. Do not overcook.
Sauté the onion, ginger and
garlic in 2 dessert spoon butter. (You may replace the butter for olive oil if
you prefer). When the onion starts to get transparent, add bell pepper and beet
root pieces and cook for another minute or till the contents are dry. Add this
to the rice and mix well. You may decorate the rice with a sprig of parsley and
cilantro prior to serving if you wish. Serve hot with a side dish or alone.
