These old-fashioned cookies
are also healthy as they provide fiber and the goodness of the oatmeal. Watch
them disappear!
Ingredients
1 cup chopped walnuts
1 cup whole or coarsely chopped raisins
2 cups sifted all-purpose flour
2 cups old fashioned oatmeal
1/2 cup canola oil
1/2 cup unsweetened applesauce
3/4 cup brown sugar
1/2 cup light corn syrup
1/4 cup egg substitute or 2 egg whites
1/4 cup nonfat milk
1 teaspoon baking powder
1.5 teaspoons cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon allspice
Vegetable oil spray
Directions
1.
Preheat the oven
to 350°F (175 deg C).
2.
Chop the raisins
and walnuts in a processor.
3.
In a large bowl,
beat the oil, applesauce, sugar, syrup, eggs, and milk until light and creamy.
4.
In another bowl,
stir together the flour, oatmeal, baking powder, cinnamon, nutmeg, allspice,
walnuts and raisins.
5.
Add the creamed
ingredients (bowl #1) to the dry (bowl #2) and blend well.
6.
Lightly spray a
baking sheet with vegetable oil.
7.
Drop the batter by
the tablespoonful onto the baking sheet 1 inch apart.
8.
Bake for 15
minutes. Remove cookies from the oven. Place on a wire rack to cool.
Yield: 20 to 30 cookies
