Ingredients
1/2 head lettuce
1 hard-cooked egg, sliced. (Substitute whites from 2 hard-cooked egg, sliced to
minimize cholesterol.)
2 carrots, peeled and chopped
1 slice bologna, cut into small pieces (Substitute 1 slice of turkey breast cut
into small pieces for healthy alternative.)
1 slice cheese (any kind), cut into small pieces. You can also use cheese food,
or soy tofu
12 green olives (optional)
2 tablespoons vinegar
2 tablespoons olive oil
pinch of salt
pinch of fresh black pepper
Directions
1. Wash lettuce. Pat dry
with paper towels. Tear lettuce into bite-sized pieces and divide it among 4
small plates or salad bowls.
2. Put egg, carrot, bologna
or substitute, and cheese or substitute on top of lettuce. Top with olives.
3. Mix vinegar, oil, salt,
and pepper in a bowl. Pour 1 tablespoon of mixture over each salad.
