Garam Masala
Garam means hot and masala means
mixture. Garam masala is not curry powder. It is a mixture of spices sometimes
used in various vegetable dishes, pickles, and herb tea in Indian cooking.
Garam masala will keep
indefinitely.
Garam masala #1
This is a general purpose masala
for general use when desired.
Ingredients:
2 cardamom pods, seeded
1 teaspoon whole cloves
30 whole peppercorns
2 teaspoons whole cumin seed
1 2-inch piece cinnamon stick
Directions:
Measure all the
ingredients, discarding the pods of the cardamom. Grind as finely as possible in
a mortar and pestle.
Garam masala #2
This is used in herb teas and other
beverages.
Prepare exactly as above, but omit
the cumin seed.
